Recipe of the week! Week 2 SW recipe.

I tried two slimming world recipes this week.
SW fanta gammon/ham in the slow cooker and SW crustless quiche.

We have a family sized slow cooker, so I was a bit disappointed to have to use a whole full sized bottle to fill it!
I didn't look at the amount but I'm assuming those bottles are around 2 litres.

So first step is to remove the ham from all It's packaging. Take off any fat, then put into the slow cooker and cover in fanta.
The fat running through the middle was removed after.

As you can see in the picture, it was fizzing away around the ham.

So it went in for 7 hours on low and I served it with baby potatoes in their skins and a mix of vegetables.

The meat was literally falling apart, very tender, and it definitely had a different taste to it.  I quite liked it, but I wasn't mad about it.
I could take it or leave it, it wasn't like the diet coke chicken where I thought it was delicious and I know I'll do that again. 
Whether I will this one, I don't know. 
I'm not sure. I would be just as happy with normal ham, so it's unlikely.

The second meal, the crustless quiche, was a lot quicker to make and cook.

So I chopped the bacon, mushroom, tomato, onion and peppers and cooked them up in a pan.

Next I mixed up the cottage cheese and chive with the eggs and I think I put a bit of garlic as well. 

I don't have a flan dish, so I used a pie dish, put a layer of the bacon and veg

then half the cottage cheese and egg mix

Then I did the same again and it filled the dish right up. 

I then decorated the top with some more tomato

Then I popped it into the oven and hoped for the best! 

The end result:

It was absolutely delicious!!
I'll definitely make this again.
I purposely didn't add cheddar cheese or salt and pepper etc as I just wanted to know what it tasted like plain and I actually think it was nice enough as it was.
I loved it! Yum!!

Enjoying food SO much, but without the guilt!

I'm having such a good week with my food and really enjoying eating so healthily. It's so great as well to have no guilt.

Usually it's a case of feeling bad after a good meal and maybe regretting choices while feeling bloated and gross.
Either that or feeling bad because I've just grabbed a pizza or packet meal for quickness.

Not now. I feel SO much better. I'm really enjoying eating 'real' food.
I like planning what to make.
I don't even mind cooking from scratch, in fact I really like it.
The only down side is the amount of washing up we're left with after, haha.

I've tried two SW recipes this week and also just tried to eat a good amount of salad or vegetables with my meals.

I've decided I like keeping a food diary.
It definitely helps to keep me focused and I'm planning to continue even after the first four weeks of handing in diaries to my SW consultant ends.

Speaking of slimming world, I got a lovely email today from the head office asking how I was getting on and making sure I didn't need anything.  Wasn't that nice?

Recipe of the week! Week 1 SW recipe.

I decided Im going to try and make at least one SW recipe a week, or at least a new variation of one I've already tried.

So week one's recipe was SW diet coke chicken.

I've been curious about this one but was just unwilling to try it when I did SW last time, so with my new decision of trying new things I decided to make this the first one on my list.

So here it is!


I really enjoyed making this.

I stuck to the exact recipe, but you could add anything that you wanted really and so I do plan to make this again with different vegetables at some point.

It looks quite liquid while cooking.

But it reduces down towards the end to a lovely thickish sauce and it tastes delicious!!

I was reminded while cooking this, of exactly how much I enjoy cooking from scratch, if only time and life allows!

Anyhow, week ones SW recipe was a resounding success, so a big thumbs up from me for this one!! 👍

I'm looking through to choose one for week two now!

All part of the excitement of this better way of eating and it's helping to keep me focused and on plan as well.

Wednesday night was my first official weigh in.

I wasn't disappointed exactly, because it's kind of the usual for me, but I had felt hopeful, that considering how good I had been and how strict on myself, that I might of had a little more of a loss that I did, so in that sense I s'pose I was a bit disappointed.

We're doing food diaries the first four weeks, so if I'm making a big mistake anywhere, she can point it out for me, so that's good.

Anyhow we will continue on. I'm still feeling very motivated, so we will see what this week brings ....

Every loss is a step forward to my goal!

The first week.

So the first week on plan has been a mixture of good and bad for me, in the sense that I was unwell the first few days, so didn't eat properly.

Since then though, I've been right on plan and even been easy on my syns as well.

So here's a few of the meals I've enjoyed.

We've also had to take Father in law for a meal out and there wasn't much choice in the way of SW friendly meals, so I just made the best choice I could.
A spaghetti bolognese dish.
I had only had one cup of tea that day, so the rest of my hea choice covered the parmesan on it and I know the mince was steak mince, so not sure about fat content or how it was cooked.  So I put 10 syns to cover everything.

Hopefully that will keep me on plan.

So.... first weigh in tonight.
I'm half excited and half not.
Mainly because I just don't seem able to lose much at a time generally and so for the amount of effort I have to put in with my will power etc, it seems a shame not to see a bigger loss by comparison to how some people lose.
I wish I was able to do the same.

Anyhow, tonight all will be revealed!!

It's official!

So on Wednesday night, 8th Nov 2017 I joined slimming world and am now an official member!! Woohoo!

I was really glad because it seems I haven't always got the right amount of syns counted for things I was eating, so hopefully now I'll have a better idea of what I'm doing.
Some of the things on the B list have changed as well, so I need to have a good check through my book and make sure I know what I'm doing.

Anyow this is a new start, so I'll write the official slimming world figures from now for my weight and will just check my BMI, body fat and body water at home for myself.
I might still add that weekly as well.
Not sure yet.

But this is it!  We're off!!

On Tuesday I went with hubby for a health check at our DR surgery. 

After doing our bloods and things, she checked our weights an on working out my BMI, I was offered a referral to slimming world, which meant I get to go to a group for 12 weeks free! 
I was SO excited and was saying yes please before the nurse had even finished her sentence, haha. 

Today I got my referral information through the post from Slimming World and so I plan to attend my first group next Wednesday.
I know I should probably be quite sad and even a bit fed up or perhaps embarrassed even, that I'm so overweight that the NHS is willing to pay to send me to a slimming class, but I just don't feel that way.
I just feel really happy to have this opportunity and I can't wait to get there and get started. 

For now, while I still plan to try and be sensible until I go, I won't be sticking with the plan or weighing myself on Monday, but once I go on Wednesday and get weighed etc there, I will restart on here again from that time. 

So, it's just a temporary break for a few days and then I'll be back on Wednesday. 

Until then, keep strong, keep focused.

Weekly weigh in, # 2

I've been really good this week and have upped my water intake and I really do feel different so I was quite excited to weigh in this morning.

However, after weigh in, it's fair to say I was somewhat less than excited sadly.

So 6oz loss!!
After all the effort I put in last week I felt really let down.
I just couldn't believe it because I actually felt really different.
So why?

All I could think of was that maybe the tuna mayonnaise jacket potato was still catching up with me or maybe it's just that my old bod just doesn't lose much now, I don't know, but the scales didn't reflect how I felt at any rate, that much was sure.

So after awhile I decided to check my measurements and see if that told a different story.
When I started the plan I measured myself all over, which I've never really done before but this time I decided I would re-measure and compare once a month in the hopes, that too would give me a boost.

Well, it's not a month yet but I definitely needed a boost, so I whipped the old tape measure back out and thankfully it did the trick and made me feel much better.

I might not have lost much weight wise, but I was happy to see a difference of either an inch or half an inch on each part by comparison to my previous measurements.


Keep focused, we mustn't give up, got to stick with it and remember, every little loss, each ounce, is a step, albeit a very small one, in the right direction.

The wisdom of Water.

I knew it was good for you to drink water but never really gave it much more thought, however after researching into water and water retention, I'm seeing it in a whole new light.

Water helps convert our fat into useable energy, but if we aren't drinking enough, then our kidneys get overwhelmed with concentrated fluids and that then makes our liver have to do extra work.

Our liver should be working hard to turn our body fat into useable energy but if it has to go help out kidneys, then that extra fat is just held onto because the liver is too busy doing the job that the kidneys would have been doing, had they had enough water!

Now here comes the water retention bit ...
Because of this situation, our body then starts to retain existing water to reuse, almost like it were in a famine situation and this is what causes water retention and bloating.

So the best way to get rid of this and return our bodies back to normal service, so to speak, is to give it that water it craves.

Apparently once we start to do that we'll find we get thirsty more often and this then starts to kick our body into a more healthy cycle of water hydration, but once we start to slack off, our body will go back to the water retaining mode and the whole bad cycle starts again.

So it's down to us and really, considering the way water affects our health generally, it's something we really need to get good at.

Water lubricates our joints and organs, it maintains our muscle tone, keeps our skin elastic and helps soften it, it regulates body temperature, filters out impurities, helps our brain function and transports nutrients to and from our cells.

What an amazing resource!!

I've fallen short on my 2ltr goal at times but I'm definitely going to make a better effort from now on. Apparently, it's best to sip it through the day rather than just chucking a big amount down your neck in one go.
That only results in a desperate dash to the toilet, but sipping often throughout the day is best for the body.
You can tell it's working well if you notice your urine being consistently light coloured, apart from the first one of the day of course.

Here's a brief look at how my water consumption has been.
I'm going to see if I can improve this from now and hopefully that should help my weight loss as well.

So, now we know just how important water is to our health and we have every reason to start raising our glasses to more weight loss successes!

So far, so good.

So far this has been a really good week.
I have 17 syns saved for the weekend if I need treats and I still have today's syns to enjoy yet.

I've been good with my meals and am just really enjoying the plan a lot.

I'd like to be able to spend more time having a go at making some of the slimming world recipes but it's been such a busy week I'm just happy I've stuck with the plan and kept on track for now.

I've also enjoyed a roast chicken dinner and assorted salads as well. 
I really hope if I can be good over this weekend that I should get a loss on Monday's weigh in. 

That thought should be enough to keep me focused I hope!

The water cycle

One thing I don't understand is the whole water issue when it comes to weight loss.

We weigh more at times because we retain water and yet it's drinking loads of water that seems to really help up our weight losses.
If we are retaining water the advice is to drink more!! And it works!!
It definitely makes a difference to me.
But why?!

I'd love to understand that concept more.
I have to make a mental note to research that.

I'm setting myself a goal of drinking 2000ml per day but I count the odd cup of tea within that figure as well.
I do like water but I find I struggle to drink that amount for some reason but if it's going to help me shed some pounds, I'm all for it.

I have a kids drinking bottle that measures 500ml filled right up and I'm aiming at 4 per day eventually with any cups of tea as an extra amount.
I've cut back on tea and I'm drinking mostly 2 but sometimes 3 per day.
At one point that was probably it for my liquid intake. I definitely didn't drink enough.

Now though, I'm intending to change that and get that water cycling through this bod, hopefully washing all this fat out with it!

Weekly weigh in, # 1


It was with much trepidation I got on those scales this morning because I don't feel like I've lost anything, whereas in the week, up until I got  'Trashed by Tuna' I actually felt a bit different.

Anyhow, the good news is .....
We still got a loss!!!
So happy! I really thought I'd blown it but I think being so easy on my syns all week up until then has helped.
Maybe if I'd made a better choice that day I'd have got a bigger first loss, but a loss is a loss.
I really expected a gain, so I'm really, really happy.

So here we go ....

So just a smidge under a 2lb loss I believe, 2oz to be precise.

So, new week, positive mind set and off we go!!


Self sabotage!

So this week has been pretty good ... almost.
I've been so careful, I saved syns, I'm trying to keep my water intake up and make sure I'm eating lots of fruit and veg.

All was going great until the weekend.

Every other weekend we take out my father in law, and he likes to go out to eat. So we eat out both days.
Now by choice, I wouldn't be doing this.
Firstly because of the money, but also because I want to eat healthily and I would prefer eating out to be an occasional treat.

So I wasn't looking forward to it, especially being my first week when I'm trying to get back in the swing of it all.

I was well pleased with myself though because  on Saturday I chose semi healthy and not too far off plan ...
A jacket potato, the savoury tuna version, with a nice side salad and iced water to drink.

Now I knew there would be some mayo on there, but I was expecting it to be tuna with chopped tomato and cucumber, onion or the suchlike with maybe a bit of mayonnaise mixed in.

When it arrived, this was what greeted my eyes....


There can be no other way of describing it.
I couldn't believe my eyes!

What to do? I couldn't exactly send it back.
So I ate it.

Don't get me wrong, it was lovely, but it was screaming SYN OVERLOAD at me with every bite.

How do you even begin to count syns?
So I counted 15/20 but I'm pretty sure it's more like 100 syns!!

Talk about self sabotage. My very first week as well.
I could have cried.
I obviously need to be more careful.

So, tomorrow is weigh in and I've gone from being very hopeful for a loss to being unsure if I might not even see a gain!

Nothing I can do about it now though.

Lesson learned and Sunday, today, we just went for a subway and I ate a nice healthy turkey salad with no sauce! Completely on plan.
Yay me!

Anyhow, I'll be back with the damage in the morning .... EEK!!!

Almost forgot the B!!

I've really enjoyed my meals today.
Started the day off with a lovely big bowl of chopped fresh fruits drizzled with fat free natural yogurt.  Very yummy!

Lunch was home made vegetable soup. I used broccoli, carrots, cauliflower and a few small potatoes, skins left on and sliced. I had some stock in there of course, with some cumin, turmeric and Worcester sauce.
I could have munched my way through the whole pan given half a chance, haha.

Tea was spaghetti, Turkey mince with little bits of veg, carrots, green beans, sweet corn, and peas.
The sauce was passatta, with Worcester sauce, tomato puree and oregano.
It was nice.

The trusty old water bottle has been by my side today and I've managed a decent amount of fluids today.

Of course, some of this is made up from a couple of mugs of tea, but that's not bad still really. I'm definitely drinking more water than I was and less tea, so I'm pretty happy with that right now.

So then it got late and last night I went for a 50 minute walk with my eldest son, Tom but he'd been away today, so tonight we stayed in and I'm sitting there feeling a bit peckish when I suddenly realised I hadn't had a B choice today!! I fancied some cereal, so that was it.
No invite needed, I just dived right in and was just sat there, snacking away!

Haven't had any syns today, only 13 used so far this week, leaving me  17 saved for another day.  Probably use them on Saturday.

So anyhow, a good day, kept on plan and really enjoyed doing that.

Food, food, food!!!

I seem to have spent my whole day focusing on food!

It's been a good on plan day though. Although I seem to have eaten loads!!

So I started with cereal and banana, washed down with a lovely cup of tea, meaning that's the a and b choices gone for the day already. 

I ate a couple of pieces of fruit through the morning, then it was lunchtime....

A 2 egg tomato and mushroom omelette, with salad leaves, and the rest of the tomato and mushroom. 

So I really enjoyed this. I swirled a bit of marmite in this when I was cooking it, I thought it made it pretty tasty. 

Then for tea I decided to try a slimming world recipe.
I went for the Easy tuna pasta bake. 3 syns per serving. 
I added much more veg. and didn't season either. I don't ever add salt or pepper to my cooking anymore because most people season at the table as well, getting a bit of a double dose! 
I do like seasonings but I like to taste the actual food as well. 

I put it with more salad, so plenty of speed in this!!

I feel pretty full but I still have 7 syns for today plus 4 from yesterday if I feel peckish later. 

I'm aiming for 2ltrs water per day.
I'm on 1,200ml so far but am determined to get that last 800ml down before bed!!

So, a good day plan wise.

10 week challenge

Today was the day I set for myself to start a 10 week challenge on slimming world, but it nearly didn't happen. 
The original plan was to have some breakfast and then go to aldi to pick something up for a slimming world tea, which I was going to plan over my breakfast, lol
As it was, I had a call from my father in-law first thing and so was in a&e with him, as he needed his ankle checked out. 
I ended up getting home at 2pm having had nothing more than some water all day, which meant I was starving and so very, very tempted to just grab something and not bother with the plan. 

I'm happy to report though that I stayed determined, kept on plan totally and haven't even had any syns yet! 

So...  Now for the stressful bit. Looking at the starting stats.... Eek!!!

I'm hoping to use this blog as a little journal as well as a weekly weight recorder to help keep me focused and motivated as I'm doing this myself from home. Going to group isn't an option for me at the moment so for now, it's just a case of getting my books back out and doing my best. 

So I'll be posting through the week as well as doing my weekly weigh in's. 
I'm setting myself a 10 week challenge in the hopes it feels less daunting but that once I've got started and hopefully seeing some improvements, I'll just want to keep going.
